Cultivating Flavor

The lemongrass for tonight's broth was clipped at sunrise from our southern glasshouse. Our seasonal menus are designed around the micro-climates of this living botanical space.

We do not rush the broth; some clays require twelve hours of low embers before they release their true mineral character and depth.
